My breakfast of choice any day. This sticky, sweet and sumptuous healthy rice porridge works a treat for breakfast, dessert, supper, or as a sweet snack even. Anytime of the day is what I’m getting at.
Black sticky rice is a naturally sweet and nutty flavoured rice. And it’s incredibly healthy too. Even though it’s referred to as sticky rice, it’s not the wholegrain version of white sticky rice. Black sticky rice is a breed of it’s own.
Unlike Chinese black rice, also known as ‘forbidden rice’, this rice is from Thailand. You can find Thai black rice at Asian supermarkets where it’s usually labeled “black sticky rice,” or “black glutinous rice”. Making sure you’ve got the right rice is key.
Black Sticky Rice Porridge Recipe:
- Soak your rice overnight in water.
- Rinse well and drain.
- Add rice to a pan of boiling water, let it simmer (uncovered) for about 15 minutes until tender, and then drain.
- Combine the rice, some coconut milk, some palm sugar, a pandan leaf, and a pinch of salt in a pan, simmer again (uncovered) for another 15 minutes, stirring occasionally until it’s thickened to a porridge-like consistency.
- Serve drizzled with some extra coconut cream, sliced banana, mango, or sesame seeds.
