Fresh Coconut Smoothie

It’s simple things like these that make me happiest. One of the best things about South East Asia is that fresh juices and smoothies are available everywhere, and they’re dirt cheap too. Lime, watermelon, papaya, you name it – they’ll have it.  I’ve even had pure avocado smoothie. But fresh young coconuts are above all, my favourite. The norm is to cut a hole, drink the juice, and then scrape out the juicy coconut flesh from the inside of the shell. But what I didn’t know, was that you could blend these two together and create the most healthy, refreshing smoothie ever. I had my first ever one 5 years ago in Gili Air, one of three small islands just off the northwest coast of Lombok, Indonesia, and I can’t believe it’s taken me this long to recreate it.

All you need is one cold fresh young coconut per person, a cleaver, and a blender. I found my coconuts at a health shop, but you can get them in China Town or your local asian supermarket too. Start with the hard part… opening it.

Once open, empty out all of the coconut water and scrape out the flesh into a large cup and blend in your blender until smooth.
